There's a few reasons, such as Beerus and Whis being the pinnacle of power in DB outside of like Zeno. The biggest for me, however, is that it would bring the series full circle. The Dragon Ball Super era of the franchise began with Goku fighting Beerus, so it would be very fitting if that's how it ended.
