I feel it not matching exactly is a good thing, it is an adaptation, not a replacement. And if it gets a sequel I could see Jumba getting that redemption. Where I could imagine that Jumba, still villain like, makes a new experiment, creates a mess and Stich helps save him because even though he does bad things sometimes he is still family.

Interesting, there is that other deleted scene of robotnic surviving the second movie. If shadow's quill has a regenerative effect on Gerald, then maybe Ivo's habitual licking of sonic's quill had some kind of effect in that.
